First on the list was to say hello to Paul Bunyan and Babe! Paul will wave, wink, smile, and even talk with you. We spent several hours at Trees of Mystery and did the Canopy Trail (netted suspension bridges through these majestic old-growth redwoods) and the Sky Trail (gondola ride), and hiked all the trails. If you don’t like Tofu, like our kids, then you can substitute chicken or anything really. I use extra firm tofu and make sure to squeeze out as much moisture as I can with paper towels. Then I cut it into bite sized cubes and pan fry in a little bit of sesame oil (oil olive would work too). I flip often it to try an brown each side. I steam fresh green beans while the tofu (and/or chicken) is cooking and make the peanut sauce. To make the peanut sauce I use my Cuisinart Hand Blender. I’m really bad at measuring and just dump the ingredients in. I love the taste and usually eat way too much. I again used sticky notes so I could rearrange the order of the parks as I played with routes on Google Maps. I ran into trouble with Google Maps limiting me to ten destinations, and we had 27! I ending up finding a work around on this handy website that made it possible to enter in 25 destinations (check it out HERE). We quickly located the leak under the dinette bench. A hose coming from the hot water heater was loose. Once we got that fixed we started working on drying things out. The route we took was so steep and windy, we were thankful he was driving towing Fleetwood and not us driving her! It took about 3 hours to get down the mountain. We lost acceleration, and pulled off the road to see if we could figure it out. The drivers side rear brake was smoking so we figured they had locked up. Where we pulled off had no cell service and no one to help us. We limped the rest of the way up the mountain to Lodgepole...which was closed! Thankfully we had amazing cell service and started making some calls.
